Chicken shows up in my everyday cooking more than almost anything else — partly because it’s versatile, but mostly because it’s one of the easiest ways for me create a satisfying dinner without a lot of planning.

I pulled together a handful of favorite chicken recipes from the archive to share with you, along with a new one I just published that exceeded my expectations — baked chicken with leeks and potatoes, where the vegetables cook right underneath the chicken and soak up all the savory juices. They’re all straightforward to make, but each one has a little technique behind it that makes the final dish especially good.

Baked Chicken with Leeks and Potatoes

This recipe came together the way a lot of mine do — by looking in the fridge and working with what was there. Chicken thighs, a bag of leeks, a little Dijon and white wine turn into a super flavorful, mostly hands-off meal.
